Last week saw The Blogger Programme and vegan author and influencer, Gaz Oakley, attend the award winning Michelin star Texture Restaurant. Texture is both a restaurant and champagne bar, and is housed in a beautifully restored Georgian building on Portman Square in the heart of Mayfair. We had a wonderful time catching up with Gaz, who has worked on several foodie campaigns with TBP in the past!
Texture’s style of cuisine is modern European with Scandinavian influences, and owner Aggi Sverrisson and his team of dedicated chefs, focus on combining and emphasising different consistencies, using British produce that is sourced from both the earth and sea combined. They managed to effortlessly create meals that involved all of our senses while encouraging us to explore different textures of food and wines, all at the centre of the dining experience. It was great to find a restaurant like Texture that offered an incredibly impressive Vegan Menu, especially when dining with Gaz, who has a background in vegan cooking. Only recently, Gaz bought out his cookbook ‘100 Vegan‘ which includes 100 incredible and delicous recipes from his Instagram @avantgardevegan.
Each course we were served at Texture took us on an experience – we were kindly taken through each dish so we knew exactly what we were being served and why. They explained that they only believe in cooking light and healthy food that do not make you feel uncomfortably full, and that they restrict the use of cream, butter and use minimal quantities of sugar. Due to Aggi Sverrisson’s Icelandic roots, he explained that he tries to source and use the finest Icelandic products such as lamb, cod, langoustines and skyr. Not only are these of the most incredible quality, but they are also sourced using eco-friendly, sustainable techniques. Unsurprisingly, since opening in 2007, Texture has been awarded several awards, including one Michelin Star, The Independent New Restaurant of the Year Award, The Best Newcomer and 4 AA Rosettes.
